This Week Try...

So this week I want you to try;

Roasted Sweet Potatoes and Apples
1 tbsp dijon mustard
1.5 tsp packed brown sugar
.25 tsp ground ginger
2 tbsp olive oil
.5c apple cider
1.5tsp fine chopped fresh rosemary
1 bay leaf
3/4lb sweet potatoes (2medium) peeled and cubed (I found them already done in a bag in the produce dept at Wal-Mart)
2 Granny Smith apples, cored and cut into thick slices

Preheat oven to 350. Coat 9x13 pan with cooking spray . In the dish, combine first seven ingredients. Add potatoes and apples, turn to coat. Bake 45-50min.
