So, what is the difference between me and my other thin vegetarian friends? Well, first off I have a mega-sweet tooth and alot of veg-heads don't really do sweets. (second is I have always had a self-control issue...that's another blog.) So I have been on the hunt for healthy (actually healthy) sweets and snacks. My friend Casey and I first tried this dessert a couple of weeks ago and I was surprised! But I knew it could be better. So, I did it. Chocolate, good for you and well...darn good! No one will ever believe you if you tell them what is in it. Here it is...
Choco-love-it Pudding
1/4 c margarine (I used smart balance)
1 c avocado puree- smooth (about 2-3 ripe avocados in food processor, add water if needed)
1 1/4 c powdered sugar
1/4 c unsweetened cocoa
2 tsp vanilla (mint, almond or orange flavoring could be added in addition)
1/4 c cornstarch + 2tbsp water/(soy)milk mixed smooth
In a bowl combine cocoa and powdered sugar with a spoon until well mixed and there are no lumps. In a saucepan over medium heat melt margarine. Add vanilla and avocados to margarine and stir smooth. Add cocoa and stir until well combined and smooth. Cook stirring constantly for 3 -4 minutes. Turn off heat and add cornstarch mixture while continuing to mix. Best served warm.
